The rest of the story...

In my last blog I was proudly writing about how I had pickled a whole bunch of beets. I could not wait to try them. To my delight, one jar didn't seal and I knew this was my chance to see how great they tasted. Well, to my dismay, they were not cooked! It was similar to eating a half-cooked potato...not pleasant at all. Now there were 26 jars of raw pickled beets that I didn't know what to do with. But my mom had the idea of putting them in the canner and letting them boil for another half hour. Thankfully it worked. I am at peace again.
Cam spent most of last weekend hunting. There is a 5 day season here for cow elk. He went out about 4 times, but with no success. He saw many cow elk, even some bulls, but they were always too far away. I have to admit I wasn't disappointed. I haven't eaten much elk in my life and I wasn't sure if I would like it.
Thanksgiving was really good. We had a roast beef dinner at my parents place on Saturday, and then a turkey dinner with Cam's family on Sunday. Actually, it is Cam's- sister's- husband's family. They invite us to all their family functions because Cam's parents have never been around. They're wonderful people.
Last night we started hosting Bible study at our house again. We decided we're going to read "The Purpose Driven Life" together. I'm looking forward to it.

Hi Bon,
Did your mom tell you that you have to cook the beets first? They have be totally cooked, THEN you slice them and pickle them, and boil them in the canner to seal them! But glad that a bit more cooking worked!! We love pickled beets. Save some for when we'll ever visit! :)

Yes, my mom was helping me can them. We cooked them, but only for about 10min. They were easy to cut with the knife, so we figured they were tender enough. Oh well, a learning experience.

Hmmmm, I wonder if you had waited a FULL MONTH to try the beet pickles, like I thought you should, things would have tasted differently, hmmm. Just kidding. When your mom told me the scenario of what took place I laughed so hard I needed a kleenex to wipe my eyes. Thanks for being partly responsible for my Laugh of the Day. Aunt Judy

Aunt Judy, I'm glad you got a kick out of my story. I sure would have been mad if I only tasted them next month.
